The following recipe is perfect for a midnight snack for those days when you’re just craving chocolate. We all have our guilty pleasures and this snack is for all my chocoholics out there.

In this article, we are focusing on the delicious treat called Scotchie Bars. It is a traditional dessert in my family and my mom loves to make it as many times as she can.

The following includes all the ingredients you need:

1 cup light corn syrup

1 cup white sugar

1 1/2 cups peanut butter

6 cups crisp rice cereal

1/2 cup semisweet chocolate chips

1/2 cup butterscotch chips


  • The prep time takes about 15 mins
  • Cook time takes about 15 mins
  • They will be ready to snack on in 1 hour and 30 minutes

The steps to create these treats include:

  1. Butter a 9×13 inch backing pan and set it aside
  2. In a large bowl, mix corn syrup, sugar, and peanut butter. Cook over medium heat and constantly stirring the peanut butter as it melts to avoid burning. Bring the the mixture to a boil. Remove from the heat and mix in the rice crispies.
  3. Transfer the mixture into the butter pan and with hands covered in butter, pat down the mixture into the pan.
  4. In a smaller bowl, on medium heat, melt chocolate chips and butterscotch chips until melted. Spread the chocolate over the bar and set in refrigerator to cool.
  5. Finally, CUT INTO SQUARES AND ENJOY!
